The Perfect Spring Brunch Recipe


Spring is in the air, and it inspired us to fully take advantage from the season. So, we've stocked our kitchen with fresh fruit, kombucha and the necessary ingredients to fully embrace spring. Darby and I couldn't be together on Easter Sunday, but that didn't keep us from enjoying the holiday the best way we knew how — by preparing a delicious Easter brunch, of course!

Easter may have passed, but it doesn't have to be a holiday to enjoy this delicious meal. Any ol' weekend will do! And trust us — you're going to love this recipe and all of the ways that you can make it your own.

Darby and I started with a Lemon Poppyseed Pancake recipe from the Lemon Tree Dwelling blog, which we found via Pinterest. The recipe offered directions for delicious, fluffy pancakes and a glaze to top them off with (YUM!). So, needless to say — one look at this recipe, and we were hooked.

After following the directions straight from the blog, we decided to make some additions to make the meal even more special (and fitting for spring!). Darby topped her pancakes off with fresh blueberries to make the recipe even more fruity. You can't beat a lemon and blueberry combo, after all!

I chose to top my pancakes off with lavender because nothing screams spring quite like lavender to me!

You could also add lavender or blueberries into the actual batter or even try fresh strawberries in the recipe, too. There are so many possibilities!

Of course, the recipe would have been great all on its own, too, but it's fun to make recipes you find online feel even more authentic by going off-recipe a bit. The good news is — you can make these every weekend while the spring season lasts, if you like. That way — you can try out every combo.

To complete the brunch we had glasses of kombucha with even more lavender and coffee!

I added lavender as a garnish as well as letting lavender soak in boiling water to create a lavender simple syrup of sorts to add to the kombucha for extra flavor. It was yummy!

Darby's rose gold silverware, coffee and coffee table made for the chicest set-up ever!

This light lemon flavor couldn't have been more perfect for a spring morning, and it was a great start to our day. We highly recommend this recipe, so get your girls together because you've got brunch plans as soon as the weekend rolls around!
